It's not about twirling dough over your head or having stonemasons fly in from Naples to install a custom wood-fired oven. It's about the ingredients: a handmade crust full of basil and asiago cheese. A deliciously uncomplicated red sauce made from San Marzano tomatoes, garlic, and herbs (this is on all pizzas except the Peeps). Fresh mozzarella. No shortcuts, no preservatives, no bulk ingredients. And that makes all the difference. Please note that all pizzas are twelve inches, which we cut into eight slices when we bake them here. You also have the option of baking them at home. ALLERGY WARNING: Because our crust has asiago in it, we cannot make an entirely dairy-free pizza even without cheese on top. Also note that we have pesto available as a topping, and it contains walnuts and pine nuts. In our tiny kitchen we have no way of guaranteeing against trace amounts of cross-contamination of this or any other common allergen, though we do our best.
